Pumpkin Zucchini Bread

Fall is such a great time of year for cooking and canning. I just love to bake different things. This recipe is one of my favorites.

Pumpkin Zucchini Bread
3 eggs slightly beaten
2 cups sugar
1 cup canned pumpkin
1 cup butter
3 cups flour
1 T baking soda
1/2 tsp. each: baking powder, salt,
cinnamon, nutmeg, cloves
1 cup shredded zucchini
1 tsp vanilla
1 cup chopped walnuts/ chocolate chips

***Combine eggs and sugar. Add pumpkin, butter and vanilla. Combine dry ingredients to pumpkin ingredients. Stir in zucchini and nuts/chocolate chips. Pour into 2 greased loaf pans. Bake @ 350 for 50 minutes. cool for 10 minutes

Thanksgiving Point/ CANCER SUCKS





On the last Tuesday of August, Jenny and I took Gayle to Thanksgiving Point on Two Buck Tuesday. We rented a golf cart ($25.00 for 1 1/2 hours) so Gayle didn't have to walk. You see, Gayle is suffering from last stages of colon cancer. I just enjoyed watching Gayle with Brady, and enjoying the surroundings. It was just a great day for us all. Gayle has suffered from cancer for six years now, and things are slowing down, as the cancer has spread to her lungs. She never complains and just keeps on going. I am not so sure I would be that brave! We love you Gayle!

REMEMBERING 9/11


Today is another anniversary of the terror of that terrible day. It has now been seven years, and nobody forgets where they were on that day. Joel and I were leaving the Young Herb Living Farm in Mona, Utah, where we had camped over night with a wagon train. When we got into the truck, we turned on KSL radio and heard about the first hit on New York. Then the news kept getting worse and worse...........What an unbelievable thing! I will never forget that day for the rest of my life.
